Easy Egg Recipes

These egg recipes will get your morning started right. Camping can build up a mean appetite. Satisfy that hunger with the following breakfast recipes containing eggs. And if you want to share your favorite recipe for eggs please do so.



"Zippy" Omelettes

These omelletes are so simple and easy, and they truly are delicious. Try them. You'll be pleasently surprised.

  • 3 eggs
  • 1/4 Cup chopped bacon
  • 1/4 Cup chopped ham
  • 1/4 Cup chopped mushrooms
  • 1/4 Cup chopped onions
  • Cook the bacon, ham, mushrooms, and onion in skillet for 4-5 minutes. Crack the eggs and put them into a zipper lock freezer bag (make sure it is a freezer bag. Regular storage bags will melt). Add the bacon, ham, mushrooms, and onions to the bag. Squeeze the air out of the bag and zip it up. Shake the bag carefully and knead the bag with your hands to break the yolks up and to mix the ingredients. Place the bag into a pot of boiling water for 4 to 5 minutes until the eggs are fully cooked. Open the bag and serve the omelette.

    Serves 1-2

    Tips for this recipe

  • Mix and match ingredients. Don't like onions? Leave them out. Like peppers? Throw them in.
  • Cover the omellet with cheese once it is cooked.
  • Top with sour cream and/or salsa to make it interesting.


  • Brekkie Burritos

    Here is vegetarian egg recipe submitted by Victoria Johnson. And there's a tip at the bottom of the recipes for anyone that is a non-vegetarian. Thanks a bunch Victoria! Here is the recipe in her own words:

  • Large flour tortillas
  • leftover potatos cut into cubes
  • red bell peppers
  • fresh sliced mushrooms (button, crimini, or portabella)
  • eggs (if you eat eggs)
  • shredded chedder cheese (if you eat cheese)
  • salsa
  • Sour Cream (optional)
  • Get a large skillet going on medium high heat and put in a little bit of olive oil. Cut the peppers into strips and put into the pan. Cook for 2 minutes and then add the mushrooms. Cook until the mushrooms are just getting tender and add the potatos. Cook until the potatos are hot and beginning to crisp. Add the eggs if you're using them and scramble them into the veggies. When the eggs are set you're ready to go!! Take a tortilla, put in some of the mixture, top with the cheese, salsa, sour cream and roll it up!!

    Note: if you're not a veg head, you can brown sausage with the peppers for the burritos"
