Beef Recipes

You know the slogan... "Beef. It's what's for dinner." Well with these great beef recipes, it really will be for dinner on your next camping trip. If you have any favorite beef recipes, please pass them on to us so we can share them with all of our visitors.

Hobo Dinner

I hope we don't offend any hobos, but this is a fun and easy recipe for kids to help with. Oh, did I mention that it's delicious too?

  • Ground Beef
  • Potatoes
  • Carrots
  • Onion
  • Salt and Pepper
  • Heavy Duty Tin Foil
  • Ketchup
  • For each serving, place 1Tbs Ketchup in the center of each piece of doubled heavy tin foil. Cover with 1 ground beef patty, top with a slice of onion, salt and pepper to taste. Add a handful of cubed raw potatoes and carrots. Roll the top to seal and fold in each end. Cook over coals about 30 minutes.

    Variations:
Substitute the following ingredients and follow the directions above.

  • Slices of ham, pineapple, brown sugar, and mini marsh mallows.
  • Fresh caught and cleaned trout, bacon, sliced onion, cubed potatoes
  • Chicken breast, onion, barbecue sauce, green beans

  • Walking Tacos

This beef recipe was submitted by one of our visitors, Mary from Burlington, KY. This is a fantastic idea for camping with kids. It's quick, easy, and fun! Thanks Mary!

My name is Mary and I'm the Cubmaster for my sons' Cub Scout Pack in Burlington, KY. I love to take the boys camping and like to show them different ways to prepare their meals. An oldie but goodie favorite of mine is "Walking Tacos".

  • Individual bags of Nacho chips
  • Taco meat (I cook this before the campout and freeze it to use for an ice block in the cooler, then just re-heat and you are good to go)
  • Chopped lettuce
  • Chopped tomatoes
  • Grated cheese
  • Salsa
  • Gently crush the chips inside the bag. Add a spoon full of taco meat and any additional toppings. Eat right out of the bag. No clean up!

Note: Sour cream is also a great addition to this recipe, too.

    Sweet and Sour Meatballs

This beef recipe was submitted by another one of our readers, Kelly L. McCreight. This recipe sounds delicious! Thanks Kelly!

I am a mom leader for Boy Scout Troop 483 out of Cypress, Texas. We camp every month and take turns cooking for the adults. Here is a great and easy recipe I learned from the "seasoned" scouts in our Troop.

  • 1 large bag of frozen meatballs
  • 1 8-12 oz jar of grape jelly
  • 1 16 oz bottle of BBQ sauce
  • Red Pepper Flakes or Cayenne to your liking
  • Keep meatballs frozen until you leave for your campout. This way they will usually thaw by the next night and they will help keep other items cold. Put meatballs in large pot and heat while stirring constantly. Add BBQ sauce and grape jelly and mix well. Heat until meatballs are fully cooked and add red pepper or cayenne to taste. The boys love this as well and they are simple and quick. Add a salad and a loaf of french bread and you're all set.

    Dried Beef Chowder

This is a great beef recipe for backpackers since it requires light weight ingredients that are easy to carry. It is also great on cool camping trips, and it's great served before a main course.

  • 5 oz. dried beef, pulled apart (can use pepperoni, sausage crumbles or jerky)
  • 1 TBLS butter or oil
  • 1 package Potato with Leek Soup
  • 3 cups water
  • 1/4 cup dry milk
  • Mix everything together and bring to a boil, and then simmer for 5 minutes. You can add freeze-dried vegetables into beef or vegetable soup mix also.

    Serves 2
